Megan Markle's Pesto Recipe

Rightly or wrongly, Meghan Markle has had a hell of a tough time ingratiating herself to the British public, and with Harry's relentless negative comments about The Palace, the Duchess of Sussex's Netflix series named "With Love, Meghan" was never destined to be a huge hit this side of the pond.

However, it was interesting to see her take on a classic pesto recipe, using carrot tops and a crazy amount of garlic.

"It really wasn't worth it" is how Isobel Pankhurst of The Express described her attempts to make it, while Gloucester Live said it "was a nightmare to make, and wasn't even that nice". I guess you'll just have to see for yourself.

How to make Meghan Markle's carrot top pesto

Thoroughly wash the carrot tops and basil and remove any tough stems.

Toast the pine nuts in a dry skillet and finely grate the Parmesan.

Add everything to a food processor (we recommend starting with just one clove of garlic and adding more later if you want a bigger garlicky hit). Blitz until you have a homogeneous mixture or leave it a little bit chunky if that's your thing. You can add more olive oil to increase the sauce's richness or more lemon juice if you want your pesto to be brighter and more citrusy.

Spoon some of the pesto onto a serving dish and top with roasted carrots plus a drizzle of olive oil, flaky sea salt, and some fresh carrot top fronds.
